Rice Fritters

When talking to my dear friend, Isabel, the other day she mentioned that her children had always liked Rice Fritters (and now in their 50's still do).

I had never heard of Rice Fritters and they didn't sound very interesting but she gave me the recipe and yesterday I had some left-over rice and made some.  They were delicious.  Not very exciting to look at!


Here is the recipe.

Beat 2 eggs with 1/4 cup flour, 1 heaped tsp baking powder and 2 tbsp milk.
Add 1 cup cooked rice
         1 cup grated cheese
         1 finely chopped onion and salt and pepper

fry spoonfuls in hot greased pan and enjoy.

I made half this quantity and used gluten free flour.  I also substituted some red capsicum for the onion and had them with capsicum chutney.  Some salad would have been nice but I didn't have any.

The half quantity made three quite large fritters and I ate them all.  The cheese melted and was yummy.  (They could have been called Cheese Fritters.

It was another cold day and it is amazing how cats can find any bit of warmth.  Kim found some sun by the bookcase.


At 3.30 p.m. Bruce, who built our house in 1967, brought me a load of firewood for the pot-belly stove.  We were getting showers at that stage but I kept going until 5.15 p.m. and got it all moved to the shed and stacked.  I had been getting very low so it is a good feeling to know I have plenty once again.

  1. Kim looks very comfortable, and yes, firewood stacked away is such a good feeling, we are using a lot this winter. Younger daughter south of Dunedin says " Horizontal snow, huge drifts, covering half the windows, 4WD got stuck, power off for a while", so we are a lot warmer here. Cheers from Jean.

    1. and we are a lot warmer than you but I have been out removing more of the ladder fern and filling the wheelie bin and that wind is icy. Sue

  2. We make Zuccini Fritters:

    INGREDIENTS

    1/3 cup plain flour
    1/2 teaspoon baking powder
    1/2 teaspoon salt
    1/8 teaspoon pepper
    2 eggs, beaten
    3 cups zucchini, shredded
    1/3 cup onion, chopped
    1 tablespoon fresh parsley, chopped

    DIRECTIONS

    Mix flour, baking powder, salt, pepper & eggs into a smooth batter.
    Add zucchini, onion and parsley and mix gently.
    Very lightly spray skillet with olive oil and heat to medium hot.
    Drop batter by large spoonfuls onto skillet.
    Fry until golden, turn, and cook second side until done.
    Can be bagged and frozen - I Vacuum Pack them in lots of 4

    1. They sound good. I had heard of zucchinei fritters but not the rice ones which didn't sound very appetising but were, in fact, delicious.

  3. I haven't ever had rice fritters, I must give that a try. I know what you mean about knowing you have plenty of firewood - I have just had a second load delivered so I feel I am set for the winter! I may not need to use it but it's good to know it's there if I run out.

    1. I had been using the wood for the pot belly stove sparingly until Bruce phoned earlier in the month telling me he would be bringing another load. I then started to use it more freely and was running very low. To make matters worse the man I got the longer wood for the wood burner from died suddenly just after I got my last load. I will have to find another good supplier.

  4. Those fritters look yummy. It's my personal opinion there is very little that can't be made better with some cheese.

  6. re your books. I met Carl Giles a few times when I was working at the gallery. He was just like 'grandma Giles', but with huge glasses. Nice man, and still one of my favourites.

    2. As I typed the above I was wondering where I had obtained that book but after logging off I noticed it is, of course, the book in my bookcase - must have been from a garage or book sale.

      I must get around to selling items on trade me. I am sure that once I do it I will be fine - it is just working it all out to start with. It would be good to get some spending money.

  7. I like rice too. The fritters look yummy. My courgettes are just comiming in now so might have a go at the Zuccini recipe too.

  9. thanks so much for this recipe. I am on a wheat and gluten free diet and so any new idea is welcome.
    I shall try these, I always cook too much rice anyway.

I do LOVE Easy Peasy as 1-2-3, and they sound so good! Congrats on the Liebster Award. Is Kim a Salmon Calico? My Sassy was, now gone 4 years after 15 years of loving her. It is certain I will be back ...PS I know what running low on wood is like, I am thinking next Winter we might have an issue. "Just Me"
