Since then I have made an easy frittata with the purple kumara, feta cheese and a sprinkling of cheddar on the top. We had this for lunch today with a salad of lettuce, grated carrot, orange segments, avocado and tomatoe. Unfortunately, at this stage only the lettuce was home grown the rest coming from the Growers Market.
It was delicious.
Looking good! We eat a lot of omelettes but never frittatas; I must remedy this.
ReplyDeleteI find a frittata more substantial than an omelette and the frittata has the added advantage of doing the two of us for two lunches.
DeleteFrittata(s) are such a great standby. You can use all sorts of ingredients. The purple kumara are amazing! So far I haven't ventured further than roasted or mashed, but tonight i am going to try grating some (with some potato to make it go further) to make rosti.

ReplyDeleteYes, it is purple kumara. On September 10 I posted when I had it in a mash with potatoe.

DeleteWe tried some purple carrots a while ago, very hard, and not so tasty as our usual orange varieties. We have lettuce, just ready, and a rabbit has come in and eaten down silver beet, spinach and the strawberry leaves!!! Netting goes up very soon.!!!!
ReplyDeleteYes, I tried multi coloured carrots once but was not very impressed with them. Slugs and snails are our main problem.
