SATURDAY

so it is Market Day and as Sweetcorn is in season I bought my usual 8, most of them have been blanched, taken off the cobs and frozen but we have just watched a Jamie Oliver "Veg" programme so I made his double corn salad.  I popped some corn I bought at the supermarket this morning and combined it with some grilled corn and served it with a dressing made from blue cheese, cheddar and  yoghurt.  We had this with some black rice, brown rice and quinoa left over from yesterday, some home grown beans with peas,  tomato and capsicum that had been gently cooked and scallops. It was delicious.




The weather is still hot (for us) 29 today and 30 yesterday and the fire danger is now extreme.  I see that next weekend there is a chance of rain, fingers crossed.

  1. I would have to take out a bank loan for than amount of Scallops! Delicious.

    1. Not exactly cheap here. We had a 500gm bag in the freezer, cooked all but ate half and will have the rest tomorrow with salad.

  2. I made a similar corn salad last summer, although I added cut up grape tomatoes. The blue cheese dressing was super.

    1. Yes, I made another for today's lunch - had leftover dressing so just tossed the popped corn and sweetcorn in it. Before I went to the gym I roasted some beetroot and kumara (sweet potato) so it made a delicious salad with some lettuce, cucumber and tomato and, of course, the rest of the scallops.

  3. Be careful what you wish for; we're into our fourth successive week of wind and rain with more bad weather forecast for the next week. We seem to be living in some sort of soggy global wind-tunnel! Salads are out of the question at the moment, though I've just made a large vegetable stew that will keep me going for two or three days. Hope you get some rain soon - preferably some of ours!

    1. Yes, what we need is a nice gentle rain but that doesn't mean that it is what we will get when it does eventually rain. I just hope we get something before it gets really serious.

  4. Sounds like a great meal, and healthy too. Anything with blue cheese receives my seal of approval.

    1. Yes, I prefer healthy meals and the blue cheese always goes down well. Lucky, because there is a lot left.
