SPICED DATE AND ALMOND COOKIES



Today I made a batch of these soft cookies and used the Danish Dough Whisk that I bought last month.

The recipe uses dates and says to mix everything in a food processor.  Unfortunately, I blew up my food processor a few years ago with this recipe.

Today I whisked a couple of eggs with the new whisk, added date paste and whisked that in then grated ginger, Chinese 5 spice and baking soda and then ground almonds and a pinch of salt.  It is quite a wet mixture so I put spoonfuls on a baking tray.

They are delicious and contain no added fats or refined sugar so they must be good.  The whisk worked beautifully.

There is a cold wind here today as there is snow in the South Island so, although it is a nice sunny day ,you do not want to be outside too long.

We are about to sit by the fire and have a cup of tea and a cookie.

I also made Welsh Leek and Potato soup for our evening meal.

  1. I have made a lunchtime soup over the past two days... it's cooled a lot, and has been raining.

  2. I'm not a fan of dates but that soup sounds really good especially now when it's getting nippy as we come into winter.

  5. That dough whisk is still on my list.
    Can't get dates here, let alone date paste. And I like dates. Sometimes we find them at xmas

    1. The cookie mix was quite thick but the whisk worked well. Came across a tray of Medjool dates at the vegie shop on Friday (I think it was Friday). Have only seen loose ones occasionally here. Reminded me of the ones we had at Christmas in England back in the day. I find the date paste so much easier to use for the cookies. Surprised you do not get them there. I just checked and ours are from Iran much closer to you.

  7. Both the cookies and the soup sound great to me at the moment, sitting here getting cold as the temperature begins to drop again LOL. I see we go into Level One tonight - hurrah!!
